PDF to Numbered Plain Text

I need the content of several PDF files extracted and delivered as clean, plain-text output. Rather than standard paragraphs or bulleted items, please arrange every logical sentence or data point in a continuous numbered list so it is easy for me to reference later.

High accuracy is important—minor typos are fine, but I want the conversion to be as close to the source as realistically possible, so please use a reliable OCR workflow (Adobe Acrobat, Tesseract, or a comparable tool) and give the text a quick proofread before handing it over.

Deliverable: one .txt file per source PDF, each containing the numbered list in the same order the information appears in the original document.
