I need an AI-driven auto-responder that plugs straight into my email workflow and replies in clear, natural-sounding English using a library of predefined templates I will supply.

Here is the core of what I’m after:
• When a new message lands in the inbox, the system should detect the intent, choose the correct template, merge any dynamic fields (name, order number, date, etc.) and send the reply automatically—no manual review unless I flag an exception.
• I’m working only with email right now, but I’d like the code organized so additional channels such as WhatsApp or Slack could be added later without rewriting the logic.
• Templates will live in a file or lightweight database that I can edit myself; the responder should reload them without downtime.
• Logging and basic analytics (time sent, template used, confidence score) are essential so I can track performance and fine-tune wording.

Tech is flexible, though a Python solution with standard libraries (e.g., smtplib / imaplib or a Gmail API wrapper) will probably fit best. If you prefer Node.js and can achieve the same reliability, that works for me too.
