Copy-Paste Text From Scanned

I have a collection of scanned books and need their text transferred into an editable document while preserving the original layout, headings, bold/italic emphasis, footnotes—everything exactly as it appears on the page. The task is straightforward copy-paste typing, yet accuracy is critical because I want the final file to look and read just like the source.
You will receive high-resolution scans (PDF). Your job is to extract the text—whether you re-type it or run OCR and then proofread is up to you—but the delivered file must retain the same formatting. I’m looking for clean, error-free text in the same order, with page breaks, paragraphs, and any special characters intact.
Please tell me how quickly you can turn around each book and what tools or methods you prefer for ensuring format fidelity.
