PDF Sales Data Entry

I have a batch of sales records currently stored as PDF files and I need every line item transcribed into a clean Microsoft Excel workbook. Please enter each transaction on its own row and make sure the sheet is chronologically sorted so I can filter and analyse sales by date immediately after import. Accuracy is critical—item totals, taxes and any reference numbers must match the source documents exactly, and I will be spot-checking the file against the PDFs before releasing final approval. If you are comfortable working directly from PDFs and can deliver a neatly formatted, date-organised Excel file, I would like to get this started right away.
