PDF Data to Spreadsheet

I have a batch of scanned documents saved as PDFs that I need converted into a structured spreadsheet. From each file I want both the textual content and any embedded images captured. Once extracted, organise everything by document type so that each category sits in its own clearly labelled sheet or tab.

Please use an accurate OCR workflow—Tesseract, Adobe Acrobat Pro, or another comparable tool—so text comes through cleanly and images maintain legibility. I’m fine with either Excel or Google Sheets for the final file as long as cell formatting is tidy and images are anchored beside their corresponding text entries.

Deliverable: one spreadsheet containing all extracted text and images, grouped by document type, ready for immediate analysis.
