Invoice Data Entry to Excel

I have a set of paper invoices that are already filed in chronological order. I need every invoice transcribed into a single, well-structured Excel sheet capturing only three pieces of information per document: the invoice date, the amount, and the vendor name.
Because the paperwork is sorted by date, you can move through the stack from oldest to newest without hunting for related pages. Accuracy is critical; each value must match the original document exactly so the file can be imported directly into our accounting system later. A quick double-check or basic data-validation rule inside Excel is more than welcome if it helps keep typos to a minimum.
Deliverable: a clean .xlsx file with clearly labeled columns for Date, Amount, and Vendor Name, ready for immediate use.
