Convert Fitness PDF to Excel

I have a multi-page fitness storyline saved as a PDF and I need every relevant detail transferred into an editable Excel workbook. The source includes narrative text, exercise descriptions, and a few embedded tables, and I want all of it captured accurately so I can sort, filter, and update the information later.

Here is what I’m expecting:
• One Excel file that mirrors the order of the PDF, using separate sheets if that makes the data easier to navigate.
• All text placed in clearly labeled columns (for example, chapter/section, exercise name, reps, notes).
• Any tables recreated so formulas or simple calculations can be added in the future.
